Short article about the history of Fred Harvey and his establishment of restaurants in train depots. Harvey opened his first railroad eating house in Topeka, Kansas, along the Atchison, Topeka & Santa Fe Railroad in early 1876. Includes a recipe for Cream of Wisconsin Cheese Soup served at the St. Louis Union Station and later at the Kansas City Union Station in the late 1800s, and which "eventually became President Harry Truman's favorite!"
